Step Away from the Mini Loaves!

You know you are in big trouble when you try a new pound cake recipe, take one bite, and can hardly control eating one ENTIRE loaf? Well….perk up, pound cake lovers…this one’s for you….good thing it’s healthy!

Ready to Cut

Mini Pineapple Pound Cakes are the total and absolute bomb. Ingredients you probably have in the pantry, quick to whip together, and (joy of joys!) the recipe makes 3 – count them – 3 mini loaves. Let’s get cooking! Used the recipe, and added a handful of sunflower seeds, some unsweetened coconut flakes, plus chopped walnuts and golden raisins. Made the 3 loaf version, and used the “canned pineapple/butter” combo. (Be sure to drain the pineapple, and use the juice in the recipe.) Super easy!

You will have to hide the evidence that you ate one entire loaf by pretending that you spilled the mix while pouring it into the loaf pan. I don’t know, but surely you can come up with a less lame excuse, right? Hope you like it as much as we did.

  2. Oh do those look & sound great. I have got to get out to buy some mini loaf pans. They’ve been on my unwritten list of things to get when I go out but now I’d better put them on my written list. That old mental list keeps getting erased somehow.

    • I know what you mean..if things don’t get written, they don’t get remembered by me for sure! When you get a loaf pan, look for the ones that bake four loaves, and are nonstick. Makes life a lot easier for baking. Plus, fun for mini meatloaves as well.
