Yes, it’s been a while since I sat down to add any “goodies” to the site…Really busy traveling on a work project for the past 5 weeks, so not much HomeMade Cooking being consumed lately. It’s amazing how much the simple act of cooking is missed when you are forced to eat out three meals a day…..so, back in the kitchen I go!
This week, I am home working remotely (thank goodness) and took the opportunity to make one of our favorites: Roasted Vegetables. Since the weather is almost warming, I figured the oven would not be my friend at 400 degrees for much longer, so this chance to roast some ‘taters was just too much to pass up.
Super Simple Roasted ‘Taters
Preheat the oven to 400 degrees.
Wash and slice any mixture of potatoes (I used sweet, Yukon Gold, and small red ones – any combo will do just fine). Slice the potatoes about 1/4 of an inch thick, so they don’t burn or get too crunchy too fast.
Place all of those ‘taters on a baking sheet, drizzle on olive oil, little salt, pepper, a sprig of rosemary, a couple of whole / crushed / sliced (you pick!) garlic cloves, and a few red pepper flakes.
Use your clean kitchen tool hands to mix the oil and all of the other ingredients around to cover the ‘taters.
Bake for 15 minutes then stir and bake another 15-20 minutes…depending on how you like your roasted ‘taters.
