We will never feel the same about pancakes again. Or how easy it really is to scrape your knuckles on the grater. But that’s another story…back to the pancakes.
Tired of eating the same old – same old for breakfast, it was time to shake things up a bit. Lo and behold, Cooking Light must have heard our cries for Help!
Do you ever save a recipe (from 2009, no less!) and figure that someday you’ll actually cook that recipe? This is one of those – Carrot Cake Pancakes – Had some extra carrots. Time to cook ’em up.
To make it our own, we did not use the honey/butter topping, but opted for a few berries and some fat-free Greek Yogurt — plus an extra dash of cinnamon on top.
Now, it’s time to enjoy your carrots for breakfast.
My sister is always experimenting with breakfast food but she has never crossed this recipe. These carrot cake pancakes look absolutely delicious. I will definitely have to try this recipe, yum!!

Not a bad idea at all. Love those berries on top too. You know I absolutely love breakfast but I hate to make it. It used to be Sundays was the day that my husband would make pancakes, French Toast, or something special. Alas, since my daughter moved away we usually do a grab whatever kind of breakfast.

The great thing about pancakes is you make a big batch, then freeze them, then just pull a few out of the trusty old freezer when you are ready to eat them! I love my breakfast, as you can tell from the blog….

Probably cause you could put them out in the yard this time of year, and Lola would find them and eat them! LOL! Who needs a freezer, right?
