How about we create a Kitchen Invention with Gnocchi, spiralized Zucchini, Tuttorosso Diced Tomatoes, and green peas, all in a super light Spring-time sauce?
Grab a glass of wine and let’s get started.
Simple is best, and that’s what this is all about – don’t have a spiralizer? Use your zester to create ribbons of zucchini.
Chop 3 gloves of garlic, add to your pan with olive oil. Sizzle a bit – don’t burn the garlic! – and add the zucchini ribbons. Pretty!
Next in – the diced tomatoes, some of the tomato juice from the can, and bring to a boil.
Turn the heat to low, and add a small can of green peas. Way to amp up our veggies today, right?
Toss in some Italian herbs, maybe a little oregano, and a twist of the pepper grinder – DONE! Dinner is served!

Looks wonderful & that’s quite a nice little package you got. I bought my daughter a spiralizer for Christmas & she loves it. I was a little hesitant to get it because it really cost a lot but she does seem to make use of it plus she make some wonderful garlic zucchini for us at Easter that I loved.

Everyone I know who has one LOVES it. I just could not get another kitchen tool, no place for it! So used the handy zester, and it worked pretty well. Not as curly and pretty as the ones in the pictures from that cool blog, but got the job done. Don’t you just love zucchini and garlic? So simple, and such good combo. How’s your weather doing? Thawing yet?

I do love the garlic & zucchini – you’re right about it being simple but oh so tasty. You won’t believe this but yes!!!! We are finally getting actual, for real warm weather & all of our snow is gone except for the one dirty pile off the back porch. That will be there for a while since it doesn’t get much sun – but Lola still loves it & that’s where she parks.

Glad you are thawing for the new season…how is it that Lola finds just the right place to park it? LOL! Bet she can soak up some dirt and melted snow…

Well, mud season so I keep some of John’s tube sox at the back door & when she comes in I pull them on her front paws. It doesn’t last long but enough to get the worst of it soaked up.
