Delicata Squash Frittata

Delicata - Plated to eatSeems like there are a LOT of talented bloggers out there, posting some really good-looking and tasty dishes. Every time I turn around, one of my blogger friends has a recipe that is a “must try” for us.

In that vein, here is a tasty little gem of a recipe from Marie at the Proud Italian Cook blog. Utilizing one of our ‘faves – delicata squash – this was just the ticket for a laid back Sunday night dinner.

Just in case you’ve never had the pleasure of tasting delicata squash, it’s soft on the inside and a bit crunchy on the outside after you roast it in the oven.

Once the slices are roasted, you could easily mistake them for onion rings, right?!?….

Easy to prepare stove top – just pile the ingredients one on top of the other (we used small tomatoes, since no cherry tomatoes at the market).

Add the spinach –

Next, the cheese (used both grated mozzarella and some white sharp cheddar).

And in the oven she goes, under the broiler (watch closely, so you don’t burn this baby!). Cooked to perfection…

All we added was a few slices of fresh pineapple and a small piece of Banana-Nut-Chocolate Chip Quick Bread (more on that one later…new favorite around here). Enjoy!

  1. I don’t think I’ve seen that squash before but it all looks great to me. And I’ll add this to my list to try – you’ve not steered me wrong yet.

    You are right – there’s lots of talent out there, and Marie is one of the best. I remember that post , and the frittata was SO tempting. Yours looks wonderful!
