Bake Some Morning Love In the Kitchen!

Baked Oatmeal - Overhead ViewMore of my blogger buddies are keeping me inspired to get in the kitchen. This time, it’s  Erin and Dara, at How To Eat, with this dish of wholesome goodness.

They called it Baked Pumpkin Cranberry Apple Oatmeal, but that long title really made me hungry….and since the weather is getting a bit chilly, and I’m wanting to cook something nice and warm, this was just what the doctor ordered to chase away the chill!

The addition of pumpkin added a nice note of fall flavor, and the ground flax seed was indeed a healthy way to bulk up the (already good) fiber content.

Used fat-free milk, and a bit less sugar than called for – next time will probably put a little more oats on top with the walnuts, for a “crunch” topping.

Only thing needed was a spoon, some Greek yogurt, and fresh raspberries – now that certainly chases away the chill!

  2. Perfect to top that with fresh raspberries. I’m afraid we haven’t seen any up here for a while now although this was a great year for them. Looks like a great dish to me & interested that it’s got the flaxseed in it. I’ve been taking flaxseed oil for years now for a particular ailment & it seems to have helped me.
