Craving muffins, and hungry for something a little sweet, I thought it was time to cave in and bake a seasonal treat. And we all know that
chocolate pumpkin is seasonal, so take a look at these ‘beauts.
This recipe, from an Ellie Krieger cookbook, hit all of the right notes – seasonal (pumpkin), not too sweet (substituted honey in lieu of molasses), nice spice notes, and handy kitchen staples.
Oh, did I mention that there could have been dark chocolate pieces added to the middle of said muffins? There, I confess…but before you roll those big eyes of yours, remember that dark chocolate is oh-so good for you. It’s not like I added an entire bar of it, or anything like that. Just some smashed up pieces. That’s all.
Here’s the plan: mix together the dry ingredients, then mix together the wet ones. Add and stir just until moist (the secret of good muffins – Do. Not. Over. Mix.).
Fill the bottom 1/2 of the muffin pan, sprinkle on some chocolate pieces, and then fill up the rest of the way. Yummy! It will be all melty and stuff…perfect afternoon snack.
In they go – to the oven, then to my hungry, waiting mouth. My, my…these really do hit the spot. Glass of cold milk, anyone?

The whole wheat pastry flour made all the difference in these…light and tasty indeed, even with the chocolate..LOL!

You happened to catch me during a pumpkin muffin craving phase but these look much better than Hannafords. And of course they don’t add the nutritious chocolate bits. I like the honey substitution too.
