When tofu is mentioned, some people just give me an “it is icky” kinda look…scrunch up their nose…and say “but it has no taste”.
People – You Know Who You Are!
This recipe is ideal for All Of You. It combines the best traits of a week-night meal:
- Quick
- Tasty
- Healthy
- Inexpensive
Plus, you probably have all of the items in your pantry and fridge. Just need that one elusive ingredient – tofu!
Using firm tofu from Whole Foods, we drained it, then used paper towels to dry it thoroughly prior to cutting.
Beat the egg…mixed together the dry ingredients….and Presto! – ready to cook.
While this simple prep is happening, open a jar of marinara and heat on the stovetop.
While the tofu got it’s brown on, we popped open a bag of fresh haricot verts from Costco, added a bit of water to a bowl, placed the beans in the bowl, and covered it with plastic wrap. In the microwave it went, and 4 minutes later beans are ready. Drain, plate, and sprinkle slivered almonds on top and a drizzle of EVOO – Can you say “side dish” in 5 minutes or less?
Here’s the final result – Rachel Ray has nothing on this 13 Minute Meal! LOL!

This is a fantastic idea! I normally dislike tofu (ick… sorry, it’s true!) but this recipe looks absolutely delicious! I will give this a go. Thanks to you and to Liuba for the inspiration (going to check out Unwind Cooking now!)

I have to admit, I’m one of “those” people. I bought some tofu one times years ago & it’s probably still in the back of my fridge. I have to say you do make it look appetizing.

You will have to try this one. I PROMISE you will like it. But maybe get some “new” tofu, and trash the old one in the fridge, ok?!?!

I like tofu. I have a recipe for tofu chocolate pie … you’d never know it was tofu … so good.
