Saturday Cooking Adventures

More cooking for friends this past Saturday, but without my special helpers this week. These ladies stay busy! When a girl has to get her hair done, then a girl has to get her hair done, right?!?!? And when Scout Camp calls, well – you do indeed answer!

But that did not stop me from forging ahead, alone – except for the Doggie Assistants, but all they want to do is play and help clean the floor, which does indeed save me time with final clean up!

Recipes for this session (all from EatingWell website) included:

  1. Real-Man Quiche
  2. Oven-Barbecued Asian Chicken
  3. Chicken Florentine Roll-Ups

The Quiche was turned into more of a frittata, since no crust was used, plus the Italian sausage was changed to ground turkey. Swiss cheese was the bubbly topping, and no breadcrumbs were added.

Next came the Asian Chicken, which smelled delish and (I’m told….) tasted “WOW” with no leftovers in sight. Substituted chicken drummets……these were prepared and put in the ‘fridge, so the entire family could enjoy them the next night for dinner.

On to the Roll-Ups. Turkey cutlets fit the bill, and these little babes sure looked stunning! Off to the freezer they went, four to a pack, to be enjoyed on another night.

Did I tell you about the 7 cups of brown rice that the rice cooker cooked while I did the above mentioned heavy lifting??!!  If you don’t have a rice cooker, you are truly missing out on the most foolproof way to prepare rice. Plus, the extra is easily frozen for later use with those Roll-Ups. Now, that is my kinda morning – cooking for friends!

  1. I’m pretty sure rice cookers are straight from heaven to us. I pretty much love mine. 🙂 Showing up to cook when all the groceries are purchased sounds rather ideal. And now I’m craving a frittata….

  2. Aw, a shame to lose your helpers but good to get the floor cleaned up. Everything looks so delicious & you are one incredibly organized lady. I was just about to do a post about cooking up a batch of cinnamon rolls for a friend. Some meals are just made with love.
