Herbed Chicken and Dumplings – Perfect For the Cold Weather

It’s been a bit chilly here in the Atlanta area lately – lows in the 20’s and highs in the low 40’s… yikes!  NOT my kind of weather for any outdoor adventures.

When all else fails, it’s time to hit the kitchen and whip up a new recipe that has Warm Us Up written all over it.

Herbed Chicken and Dumplings sounded like the perfect way to chase away the chill. Easy, healthy, and smells so good cooking, it’s ideal for a fast healthy meal during the week.

Here’s how we made it our little Kitchen Invention: Doubled the carrots. Had buttermilk on hand, so used that in lieu of milk. Deleted the onions and added more herbs and garlic. Had 2 chicken breasts thawed, so cut those in bite size pieces.

Sauteed some  mushrooms and poured in the mix with their juices, which added a nice flavor.

Also, 5 minutes before cooking time ended, we added fresh baby spinach and simply stirred into the mixture.

  1. Ah, I can smell the aroma all the way up here & I’m liking it. This really looks great. I haven’t had that type of dumpling since my mother used to make them decades ago. By the way, I love the serving dishes!
