Saturday was a beautiful day – especially since Cooking Class happened at our house! That would involve chocolate, oats, nuts, apples…..you get the picture….and Bobbie was ready for the task at hand.
Upon Bobbie’s arrival, we “suited up” in our aprons, and got right to the recipes of the day. First up, melting chocolate for the Dark Chocolate Oat Clusters…next were the Chocolate, Fruit, and Nut Clusters.
Too much chocolate, you ask? No Way! Full of anti-oxidants, low in fat, and good for you fiber. What’s not to love about chocolate with those benefits?
While the chocolate goodies were placed in the ‘fridge, we moved on to the Cranberry-Oatmeal Bars. These were super easy to make, and absolutely tasted better than the pre-made, packaged bars you buy in the supermarkets.
And now for the finished product!!!
The only item we changed was to eliminate the 1/2 c. sugar, and substitute 2 Tbls. maple syrup and 2 Tbls. brown sugar.
Next, we moved on to the Skillet Apple Crumble.
Made in a cast iron skillet, and cooked on the grill, it is a simple dish using sliced apples and Craisins, mixed together with a splash of apple cider or apple or orange juice, and a sprinkle of cinnamon. Stir together to coat apples.
Then, in a small bowl, mix together 1/4 c. of oats, a handful of chopped walnuts, a sprinkle of cinnamon, a pinch of flour, 1 Tbls. of brown sugar, and a drizzle of maple syrup. Mix well (with my favorite kitchen utensil – Clean Hands!), and sprinkle on top of the apple mixture.
Place on a pre-heated grill (about 350 degrees) for approximately 15 minutes. Check on the progress after 10 minutes, so the topping doesn’t burn. Enjoy with yogurt or ice cream on top. If you have leftover, try it as a topping for your morning oatmeal.
All in all – a tasty afternoon spent in the kitchen.

Oh they all look great but I think those oatmeal bars would be my choice for an afternoon snack…like right now!

You can just ask “Does this chocolate make my butt look big?”….teehee! and of course, the answer is NO WAY, since the chocolate is full of antioxidants…reason enough for me… LOL!!
