Chocolate Chip Zucchini Bread – Always a Winner

Some recipes just seem to become “Go To” recipes for certain foods. THIS is certainly one of those recipes in our kitchen.

Since the weather was a tad bit cooler this past weekend, it seemed like the perfect opportunity to bake one of our faves – Chocolate Chip Zucchini Bread – and use the last bit of zucchini from the ‘fridge. I know, I know….great way to eat your veggies, right? AND since dark chocolate is actually good for you, that’s a bonus as well…!

Super easy to make. Really tasty to eat.

Stir together wet ingredients in one bowl, dry in another bowl

Grate 1-2 zucchini, and add to the mix

Try To Wait Until It Cools.....

Can’t decide if it’s a breakfast, lunch, dessert, or snack item – that’s up to you! – so enjoy slightly warm with the chocolate chips a bit melty. Better yet, make two loaves and freeze one for later.

  1. Oh Susan, after being away on vacation, it’s great to come back & read all the super recipe ideas that I’ll have to try. I did have some amazing meals down on Cape Cod that I hope to re-create & post.
