Saturday Cooking Class – Desserts: Part Two

When we last saw our (s)heros, they were all together in the kitchen on Saturday – frantically crafting their desserts to ward away the evil villains, and make them stay far away from Calorie Town, while trying to avoid the wrath of the Trans Fat Invader. Their idea was to drop the dreaded Sugar Bomb! Then…without warning…..

Wait a minute – That’s not right…..These desserts are all good for you!

Where were we? Oh, that’s right…Part Two today. So……Back to our main feature: Mocha Pudding Cake

What fun this one is to prepare and watch, as it turns itself upside down in the oven. As it comes out of the oven, it looks like molten lava. AND it is just that hot! So be warned…let it cool for just a few minutes in the pan so you don’t destroy your taste buds by burning them off with hot chocolately goodness.

While the Mocha Pudding Cake cooked, we made the simplest of treats – Frozen Fruit Yummy In A Glass. (you guessed it – I made that one up!) 

Place one sliced, frozen banana and 1/2 c. frozen strawberries in the food processor. Blend slightly. Add 1/4 c. fresh orange juice and 1/2 c. Greek Yogurt (we used the fat-free unflavored kind from Costco) to the food processor. Process until smooth, with the consistency of ice cream. (Don’t add too much liquid, as you don’t want it to be like a smoothie. BUT if too thick, add a splash more juice).


Place in a martini glass or mug, top with slivered almonds and enjoy. You can also add some chocolate shavings or syrup on top (or both!). Or a few sliced fresh berries. Simple, delicious, and healthy!

Chocolate, Fruit and Nut Clusters were made and sent home as treats for later.

We made these using an ice cream scoop, so a LOT little larger than they should be. Nonetheless, we ate them. We must do whatever it takes to protect Flavor Town!
