Stopped by Whole Foods on Saturday for fresh veggies, and they were featuring Wild Sockeye Salmon fillets on sale. Of course, we could not resist buying a nice piece to put on the smoker for dinner.

AND in case you did not know this, Whole Foods sells “fish chunks” for about $4 per pound. The great thing is the chunks are from whatever fish is fresh and being cut that day. So, that means we got “salmon chunks” for $4 per pound (as well as some amberjack for the freezer).

Here’s the fun part: we came home with our bargain basement salmon chunks and dug out our favorite recipe from last summer: Salmon Croquettes. Last time, we made these with canned salmon and they were extremely tasty. We could just imagine what they would be like with FRESH salmon!

Hubby commenced to removing the skin, while I mixed the ingredients to make the croquettes.

 

Since this was a totally unplanned lunch, this became our little Kitchen Invention for sure!

 

The recipe is from Cooking Light (click HERE for the entire recipe) and here’s how we changed it around a bit:

  1. Did not have any green onion, red bell pepper, or parsley, so just omitted.
  2. Added some horseradish to the dressing.
  3. Added the fresh salmon, cut in a dice, once everything else was mixed to make the patties.
  4. Did not need to cook them as long on each side as the recipe suggested.
  5. Made sandwiches instead of eating as croquettes.
  6. Added sliced avocado to the bread, as well as romaine lettuce.

The fresh salmon REALLY made a huge difference in texture and taste from the canned salmon used last time. As for the sauce, that also makes the dish.  Next, we added some chopped romaine to our “burger” and dug in. Such an unexpected treat for a Saturday lunch!

Oh, did I mention that the first one taken from the pan did not get its little picture taken? It was our sacrificial burger – we just had to taste it in order to be certain we would let you all know about this lunch….no pictures of that one…! What if it had not been good? …We’d never have forgiven ourselves….:)

    Salmon is one of the things I miss here in Italy. You can get it, but it is not great. We have really good salmon in Australia, but even better is Finland. I order it everywhere I go while I am in Helsinki.

  5. Beautiful! I’ll bet the fresh salmon did make a big difference too. I really wish I had a Whole Foods close enough to run on a daily basis. Word is maybe coming, but it’ll still take a while. And that dressing looks amazing – do I see little adorable capers added to the top?
