Stumbling upon a favorite recipe that you think is lost misplaced probably misfiled is really a good thing, isn’t it? So when I found correctly filed this one, it just seemed right to share it with you (in case it was lost again….LOL!) The way I figure it, next time it goes missing, I can just find it on our blog.
Muffins for an afternoon snack are always a welcome treat. These Berry-and-Spice Whole Wheat Muffins from Southern Living magazine are NO exception! About the time the trusty stomach starts to grumble, just grab one of these, heat for about 15 seconds in the microwave, and VOILA! – grumbles be gone!
Again, not sure if it is a breakfast food, a snack, or a dessert….we’ve eaten them as all of the above…. Really good with Greek yogurt and fresh pineapple chunks on top…or with a salad at lunchtime. You pick!!
Couple of things we add to the mix: wheat germ, oat bran, sunflower seeds, and golden raisins. Also good are ground flax-seed and Craisins. Usually, there’s a ripe banana just waiting for a muffin mix to join. Plus the banana takes the place of some of the fat and sugar, so just reduce the quantity of each a bit to your taste. Usually there’s no allspice in our spice rack, so we just add a bit of freshly ground nutmeg.
Fortunately, this is one of those recipes that you can “make your own” as far as adding or deleting ingredients. Happy munching!
