Since I told you about the CSA Goodies, there have been two really fun recipes in which we have used some of the ingredients. Here are the first two:
Grilled Zucchini with Parmesan Pesto
Yellow Tomato Gazpacho in Cucumber Cups – (note, had no yellow tomatoes or bell peppers, so used red instead)

We took both of these to a Birthday Bash on Lake Windward for our friend, Jim, last Friday night with a group of friends. Since our temps have been in the 90’s, thought it best to leave the potato salad at home, so as not to infect our friends with food poisoning 🙂 That’s certainly ONE quick way to ruin a Birthday Bash, right??!!?
Simple, Healthy, Quick, and Heat Tolerant….that sure meets the requirements, right?
