Snowy with a chance of root vegetables

We are totally snowed in here, so tonight it’s all about seasonable veggies that we already have in the ‘fridge…parsnips, turnip roots, and carrots…then, from the pantry it’s sweet potatoes and Yukon Golds…hmmm…what’s a girl to do with these root veggies?

How about we roast them, season with a little salt and pepper, olive oil, maybe some maple syrup and some herbs (if the rosemary can be cut from under the snow…), and see what happens?

We’ll be sure to add a photo of the “before” and “after” for you to see later…
